Shrimp Noodle Stir Fry

- Cook the noodles according to the package instructions.
- While the noodles are cooking, cut the vegetables into 1-inch pieces, or thin slices.
- Head a large skillet over medium heat. Add the avocado oil, followed by the vegetables. Season generously with salt, and sauté for 3-5 minutes, stirring occasionally.
- While the vegetables are sautéing, mix together the garlic, ginger, red pepper flakes (if using), coconut aminos, toasted sesame oil, and lime juice.
- Pour the sauce over the vegetables, stir to mix, and cover. Allow to cook for an addition 2-3 minutes.
- Add the shrimp to a bowl and salt generously. Then, add to the skillet with the vegetables and stir to incorporate.
- Cover and allow to cook for another 5 minutes, stirring occasionally.
- Serve with a garnish of green onions, sesame seeds, fresh basil, and cilantro.
