Shrimp Noodle Stir Fry

  1. Cook the noodles according to the package instructions.
  2. While the noodles are cooking, cut the vegetables into 1-inch pieces, or thin slices.
  3. Head a large skillet over medium heat. Add the avocado oil, followed by the vegetables. Season generously with salt, and sauté for 3-5 minutes, stirring occasionally.
  4. While the vegetables are sautéing, mix together the garlic, ginger, red pepper flakes (if using), coconut aminos, toasted sesame oil, and lime juice.
  5. Pour the sauce over the vegetables, stir to mix, and cover. Allow to cook for an addition 2-3 minutes.
  6. Add the shrimp to a bowl and salt generously. Then, add to the skillet with the vegetables and stir to incorporate.
  7. Cover and allow to cook for another 5 minutes, stirring occasionally.
  8. Serve with a garnish of green onions, sesame seeds, fresh basil, and cilantro.
