Celery root is a highly under appreciated nutritional powerhouse. It is full of vitamins and minerals, and a great way add more plant diversity to your diet. This perfect fall transition salad is light, refreshing, and tangy. It goes great with roast chicken or a pork chop.

Instructions
- Add the shredded celery root, fennel, apple, and walnuts to a medium-sized bowl.
- In a small bowl, whisk together the mustard, lemon juice, honey, and olive oil. Season with salt and pepper.
- Pour the dressing over the salad and toss to combine.
- Season with additional salt and pepper as desired, and serve.
