- Heat the grill or a grill pan over medium-high.
- Coat the watermelon slices with 1-2 tablespoons of the olive oil and grill for 2-3 minutes on each side, or until there are visible grill marks.
- Set the watermelon aside to cool, then slice into cubes, discarding the rind.
- While the watermelon is cooling, make the dressing by whisking together the remaining 1/4 cup of olive oil with the lime juice, honey, and a pinch of maldon sea salt.
- In a large salad bowl, add the arugula, followed by the watermelon cubes, red onion, olives, feta, and torn mint leaves.
- Mix in the dressing and toss to combine, then garnish with the crushed pistachios, and season with extra salt and pepper to taste.
